But Karen’s journey into nutrition isn’t what you’d expect; it’s a story shaped by her unique background in chemical warfare and an experience that would forever change her life and her approach to health.


A New Beginning: From Military Captain to Mom


After completing her service as a captain in the United States Army, Karen settled into her new role as a full-time mom while her husband took a pastoral position in Granite City, Illinois. The church had prepared a parsonage for their family, laying down "new-to-the-house" carpet that had been stored in a garage for years. Little did they know, this carpet contained dormant carpet beetle eggs. When the warmth of the house revived these eggs, it unleashed thousands of beetles, creating an infestation that was impossible to control.


A Routine Spray and an Alarming Reaction


The church called in an exterminator to spray the house, assuring them that this was a typical procedure. The family vacated the house for the day, following all instructions to return only after the spray had settled. But shortly after moving back in, Karen, her husband, and their children began to feel ill. Karen initially thought they were catching winter colds, but her 18-month-old daughter soon suffered a terrifying grand mal seizure. Karen’s instincts told her something more serious was going on.


Refusal to Accept the Diagnosis

They rushed to the ER, where doctors diagnosed her daughter with double pneumonia, treating her with antibiotics. But back at home, the seizures continued, and each hospital visit offered the same answer: pneumonia. One particular episode lasted over an hour—an agonizing experience as Karen and her husband held their little girl down on the examination table while she convulsed, the ER doctor finally conceding there was little they could do.


Military Training to the Rescue


In that desperate moment, Karen’s military training kicked in. As a former nuclear, biological, and chemical defense warfare officer, she recognized her daughter’s symptoms as possible nerve agent poisoning. The spray used in their home was an organophosphate, a potent nerve agent. But when she requested a simple test to confirm this, the doctors dismissed her concerns, prescribing anti-seizure medication and attributing the episodes to pneumonia.


Seeking Answers and an Unexpected Ally


Refusing to accept this diagnosis, Karen removed her children from the house and began calling poison control centers across the country. Finally, she reached Dr. Sheldon Wagner, a child toxicologist who immediately understood the situation. With his guidance, Karen collected samples of the carpet and her breast milk, sending them to Dr. Wagner’s lab. His tests confirmed her suspicions: the carpet contained dangerously high levels of chlorpyrifos, an organophosphate far above safe exposure levels. Her daughter had indeed been poisoned.

Thanks to Karen’s persistence, the hospital finally ran the tests she had requested from the start, confirming the poisoning. When specialists offered only hopeless prognosis, Karen found herself faced with a chilling suggestion: doctors wanted to perform regular liver biopsies on Ruth, not to save her but to study her liver’s deterioration.


Walking Away to Find Her Own Solutions


Karen’s response was powerful and instinctive: “No. I’m done.” She rejected their grim proposals and went searching for answers herself.


The Microfiche Journey to Discovery


With no medical or nutritional background—only a degree in Spanish—Karen went to Washington University’s medical library. It was 1989, so her only option was microfiche. She approached the librarian, explaining that she needed to learn everything about the liver and organophosphates, desperate to find a solution.


Uncovering the Power of Soluble Fiber


Day after day, Karen sat in the library, reading research, from dubious miracle cures to cutting-edge studies from the NIH. Eventually, her knowledge of the liver’s enterohepatic recirculation process led her to a realization: soluble fiber could play a key role in healing. She learned that when toxins enter the liver, they can recirculate if not properly removed, but soluble fiber—found in beans—can interrupt this cycle by binding to those toxins and eliminating them from the body.


A New Diet Protocol: The Soluble Fiber Experiment


Armed with this understanding, she devised a plan. She began feeding Ruth soluble fiber by grinding up beans and giving it to her in small doses with an oral syringe, as Ruth was too weak to eat on her own. It was a heartbreaking process, but Karen pressed on. And slowly, Ruth began to recover.

Then the University of Missouri called, offering her the chance to earn credentials in nutrition so she could formally teach others. She accepted, and thus began her formal education, eventually earning a master’s degree in biochemistry and public health.
